Depending on the previous weather conditions and the prosperity of the vineyard, the number of grapes must be reduced in the event of excessive grape growth in the interests of quality: This is done by hand using standard vineyard shears. While the cut grapes have fallen to the ground unused in recent decades, we now use the juice from these unripe grapes to produce Verjus - a tart, refreshing drink for hot summer days.
